EM Cup
The EMCup is the annual competition between the best European Hospitality Management Schools that takes place in Maastricht. The competition was founded in 2009 and over the years, this prestigious competition has grown into one of the most important competitions of the European Hotel Schools. The EMCup not only encourages students to think outside the box by proposing real-life scenarios, it is also offering the perfect opportunity to meet and discuss ideas with professionals, as well as build relationships with them.
Every year, 5 of our year 3 students fly to the Netherlands with their tutors and college lecturers to take part in this prestigious event.
This year, our team "Shannon's Shine" was made up of our Year 3 students Tess, Rhys, Araya, Tereza and Fenella as well as their tutors (current lecturers of Shannon College) Ms. Sarah Ryan and Ms. Celine Ryan. They spent 5 days networking, planning, executing, challenging and for sure enjoying themselves. We loved watching how well they represented themselves and the college and were so proud to see them return home with the recognition of "Best White Paper" and "First Place Networking Queen" for Tess! Beyond the awards, we are proud to have watched them all work so hard and so well together, bringing an energy to Maastricht that was contagious and undeniable. They each stepped out of their comfort zones and challenged themselves against the top hospitality schools in Europe. The networking opportunities were incredible, allowing them to mingle and establish relationships and connections with peers and professionals from different corners of the hospitality world! They certainly left a lasting impression!
CATEX Exhibition
CATEX is Ireland’s Largest Foodservice and Hospitality Event which takes place in the RDS Dublin. It is THE destination to experience Product and Service innovations! For three days, visitors have the opportunity to meet and reconnect with over 280 suppliers, network with industry stakeholders, source new energy-saving and waste-management technologies, and watch hundreds of chefs and baristas compete on a national stage.

Gold Scholarship
Isabella Condon, 2023 Graduate, named Gold Service Scholar 2025.
Isabella is a recent graduate from Shannon College of Hotel Management. She hails from Co. Limerick and is currently working as junior assistant manager in the 2 Michelin Starred restaurant, Dinner by Heston Blumenthol in The Mandarin Oriental Hyde Park London where she began her final year placement journey.
Condon was selected as the Scholar from a pool of 10 winning finalists who competed in the competition final in January – the biggest final in the scholarship’s history - where they had to prepare for and serve a three-course lunch at the Corinthia London to a table of VIP guest.
