The Sous Chef Apprenticeship is an 'earn and learn' Honours Degree Programme that combines on-the-job training with academic study in an Institute of Technology.

This programme is designed by industry and academic professionals so the Apprentice will gain the knowledge, skills and competencies at an advanced level, to ensure that all aspects of food preparation, production and service is are carried out to the highest standard and in accordance with food hygiene regulations, company standards and policies.

The programme enables the Apprentice to be an effective team leader and production specialist at operational, managerial and technical levels. The programme also focuses on the responsibility of guiding, directing and training team members. Apprentices will be concentrating on areas such as personal development, food innovation, and the capitalisation of market trends and the management of department finances and budgets; all the while endeavouring to exceed customer expectations.

It combines classroom training with hands-on practical skills development within the workplace. Your work-based mentor will monitor and help you progress through the apprenticeship and you will learn how your college based learning links to your everyday working environment.

Within the Modern Languages programme you study two modern European languages to degree level. It is the most intensive exposure to languages and cultures that Trinity College has to offer. You can choose between French, German, Irish, Italian, Russian and Spanish. Apart from French and Irish all languages can be studied from both advanced and beginners level.

Special Needs Assistant is a purposely designed course to prepare you for work as a Special Needs Assistant (SNA) in a variety of educational contexts, and community care settings.

This course explores a wide range of knowledge and practical skills attributes that support a productive career in this highly rewarding field. You will be able to prepare for a career as a Special Needs Assistants in primary and secondary school classrooms or special schools, assisting children with everyday practical tasks.

The purpose of this course is to equip the learner with the knowledge, skill and competence in the practices and principles underpinning the role of a Special Needs Assistant to enable the learner to work effectively under direction in a special needs capacity.

This Level 6 Major Award enables the learner to develop the knowledge, skills and competence to work in a range of community health service settings and school settings. 

The purpose of this course is to equip the learner with the knowledge, skill and competence in the practices and principles underpinning the role of a Special Needs Assistant to enable the learner to work effectively under direction in a special needs capacity.
