The Commis Chef Apprenticeship is a prestigious, state-recognized pathway designed for individuals aiming to become professional chefs. This two-year structured program utilizes a "dual-learning" model, alternating between intensive off-the-job training in a specialized college or center and practical, work-based experience. In the classroom, apprentices master the essential theory, food science, and culinary fundamentals. These skills are then honed and perfected to a professional standard in a live kitchen environment, where apprentices work under the mentorship of qualified, experienced chefs in SOLAS-approved establishments.

The National Hairdressing Apprenticeship will provide successful apprentices with a QQI Level 6 Advanced Certificate in Hairdressing. This is the only recognised national qualification for fully qualified hairdressers in Ireland. The duration of the National Hairdressing Apprenticeship will be over 3 years with training consisting of 80% full time employment and 20% off the job training with Sallynoggin College of Further Education on a day release.

Apprentices undergo training while working four days a week with their employer and attending college one day a week. The National Tour Guide Training programme at Dublinia will provide participants with the skills, knowledge and competencies to deliver and manage a comprehensive tour management and guiding service for tourists visiting and travelling in Ireland. The programme is relevant, practical and responsive to industry needs.

There are three modules: Irish Tour Guiding, Irish Natural Heritage & Culture and National Tour Management. Each module carries 15 credits.

This Nature and Adventure Leadership course will teach you how to lead groups on low land trails through Irish woodlands and in coastal environments safely and responsibly. As a Lowland Leader and National Powerboat Certified skipper, you will have the skills to teach people about native flora and fauna in Ireland’s ecosystems, and share knowledge of ecological sustainability, conservation and biodiversity as you help connect people to both forest and coastal environments.

This course will give you the skills to further pursue a degree in ecology or outdoor education after the course if you wish.
