The Commis Chef Apprenticeship is a prestigious, state-recognized pathway designed for individuals aiming to become professional chefs. This two-year structured program utilizes a "dual-learning" model, alternating between intensive off-the-job training in a specialized college or center and practical, work-based experience. In the classroom, apprentices master the essential theory, food science, and culinary fundamentals. These skills are then honed and perfected to a professional standard in a live kitchen environment, where apprentices work under the mentorship of qualified, experienced chefs in SOLAS-approved establishments.

The National Hairdressing Apprenticeship will provide successful apprentices with a QQI Level 6 Advanced Certificate in Hairdressing. This is the only recognised national qualification for fully qualified hairdressers in Ireland. The earn-as-you-learn model ensures that you are paid a weekly apprentice rate by your employer throughout your apprenticeship. The duration of the National Hairdressing Apprenticeship will be over 3 years with training consisting of 80% full time employment and 20% off the job training with Sallynoggin College of Further Education on a day release.

The National Tour Guide Training programme at Dublinia will provide participants with the skills, knowledge and competencies to deliver and manage a comprehensive tour management and guiding service for tourists visiting and travelling in Ireland. The programme is relevant, practical and responsive to industry needs.

There are three modules: Irish Tour Guiding, Irish Natural Heritage & Culture and National Tour Management. Each module carries 15 credits.
