The Long Dock is an Award winning Bar and Restaurant located in Carrigaholt on the Loop Head Peninsula in Co. Clare.

We’re proud to have built an excellent reputation for our food offering, and of the team that Imelda leads front-of-house and Tony leads in the kitchen. But we all know that it is these fishermen and farmers, these local suppliers, growers and producers that make our award-winning food so special.   

Ideally located on the Wild Atlantic Way the Long Dock is a busy venue open all year and employing up to 30 people during the season. We have seating for 80 pax inside with a further 60 seats available for outdoor dining in our covered courtyard which also hosts our Artisan food Store and Ice cream parlour.

We also provide a Long Dock take away service and outdoor / event catering for private groups or companies, we also have created a full range of preserves, chutneys, dressings, condiments and authentic Irish baked goods, that are now available in The Long Dock shop behind the restaurant and thelongdockshop.com online.

We employ people in a range of roles including, waiting Staff, Marketing, Accounts, Kitchen Staff including chefs, trainee chefs and pastry chefs.  

Placement Details

Food and Beverage production and services

While on placement students can expect to gain valuable experience in both the production of high quality foods and the service of same. Your time will be split between the kitchen operation and food and beverage services.

At all times you will be under the watchful eye of a supervisor who will mentor you throughout your placement ensuring that you gain a broad knowledge of what is required to be a member of a very successful team in the hospitality business.

Once you have completed our induction process you will complete a basic food hygiene course, which is certified. Following which you will be assigned to your first department. While working you will follow a structured training plan which your mentor will oversee and record your progress.

The following are some of the skills you will experience, but not limited to:

Kitchen: Basic knife skills, Salad Preparation, Vegetable preparation, Kitchen hygiene, time management, managing deliveries inc. stock rotation, basic pastry skills inc. Bread making, jam production, ice creams, cookies, making desserts and plating of same.

Food and Beverage service: Interpersonal skills, Barista and drink service, introduction to wines and wine service, time management, restaurant order of service to include taking orders and table service, communication skills and customer service, product knowledge and upselling skills.
