Dooley's Hotel, is a 3rd generation, family-run City Centre hotel on the historic Merchants Quayside overlooking the River Suir, with the shopping, sightseeing and business districts a mere stone's throw away. 

The Darrer Family have welcomed guests to Waterford for more than 75 years. Once upon a time our accommodation here included just eight bedrooms, a range that burnt turf and eight cups with no handles!

Dooley's has since flourished into 112-bedroom hotel with a large conference and banqueting suite. Providing a first choice location for Corporate and Leisure stays, ConferencesWeddings, or simply a refreshing short-break away. The three-star family-run hotel offers guests modern and contemporary conveniences and comforts with a warm welcome and traditional Irish hospitality.

We are just across the road from Waterford Bus Station, 5 minutes' walk from the train station. 

112 newly refurbished ensuite guest rooms include double, twin, triple and family rooms that are spacious and beautifully appointed. 

Placement Details

Depending on the students' interest the following areas are available for work experience:

  1. Front Desk - Housekeeping
  2. Food & Beverage Server
  3. A combination of both positions.

Prior to attending the property students will receive online training in the following areas:

  • Dooley's Hotel Induction
  • Certificate Food Allergen Awareness - Customer Information requirements
  • Certified Food Safety Essential
  • Certified Fire Safety Awareness
  • Serving Alcohol Sensibly
  • Hospitality Manual Handling
  • Dealing with Difficult Customers
  • Certified Infection Control Awareness

Students will experience a site tour on their first day. A supervisor and/or member of the team will be assigned to each student. 

On occasions when there are several TY students attending at the same week, we will endeavour to give the students their meal breaks at the same time. 

Front Desk - Housekeeping

  1. To welcome all guests coming to the reception desk with a smile and in a friendly, prompt, and efficient manner.
  2. Learn the correct manner to answer the telephone in a friendly manner to the agreed standard.
  3. Learn how to never ignore guests while answering the phone or dealing with another guest.
  4. Learn how to check-in and check-out guests.
  5. In the housekeeping department - students will learn how to clean and service the premises - rooms, bathrooms, corridors, public areas and toilets. Presenting a clean and fresh environment to approved standards for all guests.  

Food & Beverage Server

  1. Learn to ensure the cleanliness and order, correct set up of the Bar prior to Service, ensuring the guest are warmly welcomed, orders taken efficiently and served to standard to ensure guest satisfaction. Learn to dispense beverage orders accurately, with courtesy to the standard required and according to Legislation.
  2. Learn to observe and follow Hygiene Regulations, when carrying out all duties (polished silver to be used at all times). Health and Safety and employ safe working practices.
  3. Learn to welcome guests in a warm and friendly manner and treat them with courtesy at all times.
  4. Learn to serve meals efficiently, with the minimum of fuss or delay.
  5. Learn how cutlery and plates are scraped, sorted and stacked in the wash up area.

Please note you need to be 16 years or older to work in the bar area.

In order to get the full experience we ask students to submit an application letter indicating what dates they are looking for and what area of the hotel they would like to experience.  A CV should also accompany the application letter.

The aim of work experience is to give students a sample of what working life is like.
