Doolin Inn has 22 bedrooms, a 70 seater restaurant which serves breakfast, brunch and dinner. In May 2022 we will be launch our new coffee doc on our front terrace. Doolin is Irelands premier tourist destination village. Popular all year round with an abundance of things to do, Doolin is one of the liveliest villages with live music nightly, with a variety of pubs and restaurants to choose from.

Placement Details
Ideally a candidate would achieve one of the below over a season or two, or as weekend work year-round. Most TY students or placement students stay with us for a number of years, learning all aspects of the business up to the level of Supervisor depending on the applicant.
Depending on the applicant we customize the placement to suit the person and the length of placement
1) Food and Beverage service starts with learning to be a "Food runner" which gives a great insight on how a restaurant works. Helps the candidate to get use to carrying plates, serving, and helping the servers on the floor and dealing with guest requests.
Progress is then made to serving tables and taking orders, usually starting with breakfast and lunch service, which are simple menus and a quicker service.
There after progress is made to evening restaurant service, which is more detailed in Food and Beverage knowledge, service techniques and managing a section.
For others progress to Barista coffee making, mixology of cocktails and bartending (depending on age). Note you must be 16 years or older to work in a bar.
2) For those interested in Food preparation and who wish to focus in the kitchen, a person would start as a kitchen assistant, which is the most important job in the kitchen as without it no kitchen can operate. This also gives a great introduction to how a kitchen works.
Included in the duties are the wash up area, basic food preparation. learning how to use knifes properly etc.
From there a Candidate would learn more techniques and assist with making basic sauces, breads and components that are used to structure dishes on the menu, and would learn to work on the line in the cold kitchen sections, plating desserts, salads, sandwiches etc.
This is a good introductory to understanding the role of a chef and depending on the applicant and length of placement a candidate would gain knowledge up to the standard of a commis chef, learning to cook in the hot section and working on the kitchen line assisting the Chefs.
3) Other options are also available such as starting with Housekeeping and learning how a guesthouse or small hotel works. From there some progress to learning reception and interacting with guests, selling rooms, and learning how a reception is the communication centre for the hotel.
